Largest Bruegger's 'Zee Adds French Flavor



Ken Greene, CEO of Hot LLC in Rochester, New York, is the nation’s largest Bruegger’s Bagels franchisee, with 33 stores and 27 years in the brand. In mid-September he added a dollop of French flavor to his holdings, opening his first Brioche Duree, a fast-casual bakery cafe, in the Rochester International Airport.

It’s a joint venture with Le Duff America, the Montreal-based franchisor that purchased Bruegger’s from Sun Capital in 2011.

Greene, who’s seen it all in the Bruegger’s system, likes the new ownership. “Who would I rather be owned by, a bank or a restaurateur? As a restaurant guy, I’d rather be owned by a restaurateur,” he says.

He plans more expansion with Le Duff brands, including a new Bruegger's concept co-branded with an espresso coffee offering, the name of which he won't yet reveal.
