Allure of Kitchen has Limits for Persona Founder

Glenn Cybulski loves to feed family and friends, a passion he detailed for Franchise Times in an interview that will appear in the next print edition.

He’s the co-founder of Persona Neapolitan Pizza, a California-based chain that opened just one corporate store earlier this year and then started to franchise. “Most of the best times you had or will have with loved ones were probably around food,” he said.

But he has limits. Reached on Monday, he related the prior Friday he got married to his “sweetheart of six years. All of our kids were there and we had a big dinner Friday night,” he said. “And no, I didn’t cook, thank you very much,” he said—they went to a restaurant owned by a friend.

Cybulski is vying to gain a foothold in the fast-growing choose-your-own-ingredients pizza business. “In a sense this is a footrace,” he said.
